  • 1 whole chicken (34 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 lemon, sliced
  • Fresh thyme (optional)

Instructions

  • Preheat your oven to 375°F (or use a rotisserie attachment if available).
  • Rub the chicken with olive oil, then sprinkle salt, pepper, garlic powder, and paprika evenly over it.
  • Stuff the cavity with lemon slices and thyme (if using).
  • Place the chicken on a rotisserie spit or in a roasting pan. Cook for 1.5-2 hours, until the internal temperature reaches 165°F.
  • Remove from the oven or spit, let it rest for 10 minutes, then carve and serve.

Notes

  • For extra crispy skin, increase the oven temperature to 425°F for the last 10 minutes.
