- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 lemon, sliced
- Fresh thyme (optional)
Instructions
- Preheat your oven to 375°F (or use a rotisserie attachment if available).
- Rub the chicken with olive oil, then sprinkle salt, pepper, garlic powder, and paprika evenly over it.
- Stuff the cavity with lemon slices and thyme (if using).
- Place the chicken on a rotisserie spit or in a roasting pan. Cook for 1.5-2 hours, until the internal temperature reaches 165°F.
- Remove from the oven or spit, let it rest for 10 minutes, then carve and serve.

- For extra crispy skin, increase the oven temperature to 425°F for the last 10 minutes.
